This is a dish commonly served at Mormon funeral luncheons, where the family is given a meal following the services, usually along with ham, rolls, jello salad and cake. It is also a favorite to take to someone who is in need of a meal, such as a new mother, or someone who is ill or experiencing tough times. Food is one of the many ways we show we care for each other.
7 Medium Potatoes; cooked peeled and shredded or cubed
2 cans cream of chicken soup
16 oz sour cream
1 1/2 cups shredded cheddar cheese
1/4 cup butter; softened
1/3 cup minced onion
Topping
2/3 cup crushed corn flakes
1 pinch paprika
Preheat oven to 350 degrees. Cook potatoes and let cool, peel and shred into a large mixing bowl. Add remaining ingredients and mix well. Place in a glass 9 x 13 pan, lightly sprayed with non-sick cooking spray. Cook uncovered for 45 minutes. Top with crushed cornflakes and paprika and cook 3-5 more minutes.
